Ingredients
2 pounds beef chuck, cut into large bite-sized cubes
3 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
3 tablespoons tomato paste
4 cups beef broth
1 cup crushed tomatoes or tomato sauce
4 medium potatoes, peeled and cut into chunks
4 large carrots, sliced into thick rounds
1 teaspoon paprika
1 teaspoon dried thyme
1 bay leaf

2 tablespoons all-purpose flour (optional, for thickening)
2 tablespoons water (if using flour)

Instructions
Season and Sear the Beef
Pat the beef dry with paper towels and season generously with salt and black pepper.
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
Working in batches, sear the beef until deeply browned on all sides, about 3–4 minutes per batch. Transfer to a plate.
Build the Flavor Base
In the same pot, add the chopped onion and cook for 3–4 minutes, stirring occasionally, until softened.

Add the Vegetables

For a thicker stew, whisk together the flour and water until smooth.
Stir the mixture into the simmering stew and cook for an additional 5 minutes, until the gravy reaches your desired consistency.
