Ingredients
2 lbs beef chuck, cut into large chunks
2 tablespoons olive oil
1 large onion, finely chopped
3 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
2 cups mushrooms, halved
2 tablespoons tomato paste
3 cups beef broth
1 cup red wine (optional)
2 bay leaves
2 sprigs fresh rosemary
1 teaspoon dried thyme
Salt and freshly ground black pepper, to taste
1 tablespoon Worcestershire sauce
2 tablespoons all-purpose flour
Fresh parsley, chopped (for garnish)
Instructions
Prepare the beef:
Pat the beef dry with paper towels, then season generously with salt and black pepper.
Sear for flavor:
Heat olive oil in a large heavy pot over medium-high heat. Brown the beef in batches until deeply seared on all sides. Remove and set aside.
Build the base:
In the same pot, sauté the onion, carrots, and celery for about 5–7 minutes until softened. Add the garlic and cook for another minute until fragrant.
Enhance the richness:
Stir in the tomato paste and cook for 2 minutes. Sprinkle the flour over the vegetables and mix well to create a light coating.
Deglaze the pot:
Pour in the red wine (if using), scraping up the browned bits from the bottom. Let it simmer briefly to reduce slightly.
Combine and simmer:
Return the beef to the pot. Add the beef broth, mushrooms, bay leaves, rosemary, thyme, and Worcestershire sauce.
Slow cook to perfection:
Bring everything to a gentle boil, then reduce heat to low. Cover and simmer for 2 to 2½ hours, until the beef becomes tender and flavorful.
Final touches:
Taste and adjust seasoning as needed. Remove the bay leaves and rosemary stems.
