INGREDIENTS
Egg Base
6 large eggs
1 cup cottage cheese
½ cup milk (whole or 2%)
½ tsp salt
½ tsp black pepper
Spinach & Flavor
1½ cups fresh spinach, chopped
½ small onion, finely diced
1 clove garlic, minced
1 tbsp olive oil
Cheesy Finish
½ cup shredded mozzarella
¼ cup grated Parmesan
INSTRUCTIONS
1️⃣ Preheat
Preheat your oven to 375°F (190°C).
Lightly grease a 9-inch pie dish or baking dish with oil or cooking spray.
2️⃣ Sauté the Vegetables
Heat olive oil in a skillet over medium heat.
Add diced onion and cook 3–4 minutes until soft and translucent.
Add minced garlic and cook for about 30 seconds (don’t let it burn).
Stir in chopped spinach and cook until wilted (about 1–2 minutes).
Remove from heat and let cool slightly.
3️⃣ Prepare the Egg Mixture
In a large bowl, whisk the eggs until smooth.
Add cottage cheese and milk; whisk again until well combined.
Stir in salt and black pepper.
4️⃣ Combine
Fold the sautéed spinach mixture into the egg mixture.
Mix gently so everything is evenly distributed.
5️⃣ Assemble
Pour the mixture into the prepared baking dish.
Sprinkle mozzarella and Parmesan evenly over the top.
6️⃣ Bake
Bake for 35–40 minutes, or until:
