Slow Cooker 3-Ingredient Green Beans and Bacon

4–6

Ingredients

2 pounds fresh or frozen green beans (ends trimmed if fresh)

10–12 ounces thick-cut bacon, diced

1 large yellow onion, peeled and thinly sliced

Directions

1. Layer the Onions

Lay the sliced onion evenly on the bottom of a 4–6 quart slow cooker

This creates a sweet, soft bed that absorbs the bacon drippings and keeps the beans from drying out

2. Add the Green Beans

Spread the green beans over the onions

If using fresh, wash and trim the ends

If using frozen, no need to thaw; break up large clumps if needed

 

 

 

3. Add the Bacon

Scatter diced bacon evenly on top of the green beans

Do not stir—the bacon slowly renders its fat, dripping smoky flavor down through the beans and onions

4. Cook Low and Slow

Cover and cook:

LOW: 6–8 hours

HIGH: 3–4 hours

Cook until:

Green beans are very tender

Onions are soft and silky

Bacon is fully cooked

The bacon fat and onion juices will create a rich, savory broth

5. Finish and Serve

Gently stir everything together so:

Beans are coated in bacon drippings

Onions are distributed throughout

Taste and add a pinch of salt or black pepper if needed (the bacon often provides enough seasoning)

Serve hot, spooning some of the flavorful broth over each portion
