Slow Cooker Cabbage, Potatoes & Onion Comfort Stew

Ingredients

1 head green cabbage, chopped

4 medium potatoes, peeled and cubed

1 large onion, sliced

3 cloves garlic, minced

3 cups vegetable broth or chicken broth

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

1 cup smoked sausage or bacon pieces (optional)

Fresh parsley, chopped for garnish

Instructions

Place the chopped cabbage, potatoes, and sliced onion into the slow cooker.

Add the garlic, paprika, thyme, salt, and black pepper. If using sausage or bacon, stir it in now for extra flavor.

Pour the broth over the vegetables and drizzle with olive oil. Add the butter on top.

Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the potatoes are tender and the cabbage is soft and flavorful.

Stir gently before serving and adjust seasoning if needed.

Garnish with fresh parsley and serve warm with crusty bread for the ultimate cozy meal.

Serving Tip

Add a sprinkle of shredded cheddar cheese or a spoonful of sour cream on top for an extra creamy and comforting finish.
