Ingredients

2 lbs (900g) beef stew meat, cubed

1 medium onion, diced

3 cloves garlic, minced

2 cups beef broth

1 can (10.5 oz / 300g) cream of mushroom soup

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp paprika

1 tsp salt

½ tsp black pepper

2 tbsp cornstarch

2 tbsp cold water

Fresh parsley, chopped (for garnish)

Instructions

Place the cubed beef in the slow cooker.

Add the diced onion and minced garlic over the beef.

In a bowl, whisk together the beef broth, cream of mushroom soup, Worcestershire sauce, thyme, paprika, salt, and pepper.

Pour the mixture over the beef and stir gently to coat.

Cover and cook on Low for 7–8 hours or High for 4–5 hours, until the beef is fork-tender.

About 20 minutes before serving, mix the cornstarch and cold water to create a slurry.

Stir the slurry into the slow cooker and cook until the gravy thickens.

Garnish with fresh parsley and serve hot.
