Slow Cooker Garlic Butter Sausage, Potatoes & Green Beans

Slow Cooker Garlic Butter Sausage, Potatoes & Green Beans
(A Cozy, One-Pot Comfort Dinner)
This easy slow cooker meal is the definition of comfort food—tender baby potatoes, smoky sausage, crisp green beans, and a rich garlic butter sauce that brings everything together. It’s simple, hearty, and perfect for busy days when you just want to set it and forget it.
Ingredients:
2 smoked sausage links, sliced into rounds
1 medium onion, thinly sliced
2 tablespoons minced garlic
3 lbs baby yellow potatoes, halved if large
1 lb fresh green beans, trimmed
1 stick garlic herb butter (plus 2–3 extra tablespoons)
Garlic & herb seasoning, to taste
1 tablespoon oil (for sautéing, optional)
Instructions:
1. Optional Sauté for Extra Flavor:
Heat a skillet over medium heat with a little oil. Add the sliced sausage and onions, cooking until lightly browned and fragrant. Stir in the minced garlic and cook for about 1 minute, just until aromatic.
2. Assemble in the Slow Cooker:
Place the baby potatoes in the bottom of the slow cooker. Add the sausage and onion mixture on top.
3. Season & Add Butter:
Sprinkle generously with garlic and herb seasoning. Place the stick of garlic herb butter right on top so it melts down into everything while cooking.
4. First Cook:
Cover and cook on HIGH for 3 hours (or LOW for 5–6 hours), until the potatoes begin to soften.
5. Add the Green Beans:
Stir in the fresh green beans and add a couple of extra tablespoons of garlic butter for even more richness.
6. Finish Cooking:
Cook for another 1 hour on HIGH (or 1–2 hours on LOW) until everything is perfectly tender and coated in that buttery garlic sauce.
Tips & Variations:
Skip the sauté step if you’re short on time—it will still turn out delicious.
Use smoked kielbasa or spicy sausage for a deeper flavor.
Add a pinch of red pepper flakes if you like a little heat.
Sprinkle with fresh parsley before serving for a fresh, bright finish.
Serve with crusty bread to soak up all that garlic butter goodness.
Why You’ll Love It:
This dish is warm, filling, and incredibly easy to make. With just a few simple ingredients and minimal prep, you get a full, satisfying meal in one pot—perfect for family dinners or cozy nights at home.
Enjoy every buttery, garlicky bite!
