Ingredients
800 g beef chuck, cut into large cubes
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
3 carrots, peeled and cut into chunks
2–3 small potatoes, halved
2 tablespoons tomato paste
2 tablespoons all-purpose flour
2 cups beef broth
1 cup red wine (optional, for deeper flavor)
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 teaspoon dried thyme or a few fresh sprigs
1 bay leaf
1 teaspoon paprika
½ teaspoon ground cumin (optional)
Fresh parsley or thyme, for garnish
Instructions
Sear the beef:
Heat olive oil in a large heavy pot over medium-high heat. Pat the beef dry, then sear it in batches until nicely browned on all sides. Remove and set aside.
Build the base:
In the same pot, lower the heat slightly and sauté the onion until soft and translucent. Add the garlic and cook for about a minute until fragrant.
Create depth of flavor:
Stir in the tomato paste and cook briefly to intensify its richness. Sprinkle in the flour and stir well to form a light roux.
Deglaze the pot:
Pour in the red wine, scraping up all the flavorful browned bits from the bottom. Let it simmer for 2–3 minutes to reduce slightly.
Add liquids and beef:
Gradually stir in the beef broth until smooth, then return the seared beef to the pot.
Add vegetables and seasoning:
Toss in the carrots, potatoes, thyme, bay leaf, paprika, cumin (if using), salt, and pepper. Stir gently to combine.
Slow cook to perfection:
Bring to a gentle boil, then reduce heat to low. Cover and let it simmer for 1½ to 2 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened.
Final touches:
Taste and adjust seasoning if needed. Remove the bay leaf before serving.
