¼ teaspoon salt

4 oz (115 g) cream cheese, softened
2 tablespoons unsalted butter, softened
1 cup powdered sugar
½ teaspoon vanilla extract
Instructions
Preheat the Oven Preheat your oven to 180°C (350°F). Grease and line an 8-inch round or square baking pan with parchment paper.
Mix the Wet Ingredients In a large mixing bowl, whisk together the eggs, sugar, oil, and vanilla extract until smooth and well combined.
Add the Carrots Fold in the finely grated carrots, mixing until evenly distributed throughout the batter.
Combine the Dry Ingredients In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
Make the Batter Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing. If using, fold in the chopped nuts or raisins.
Bake Pour the batter into the prepared pan and smooth the top evenly. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Cool Completely Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before frosting or slicing.
To Make the Cream Cheese Frosting
Beat the softened cream cheese and butter until creamy and smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy. Spread over the cooled cake.
Tips for the Best Carrot Cake
Use finely grated carrots for a softer, more even texture.
Do not overmix the batter—this helps keep the cake light and fluffy.
For extra richness, add chopped walnuts, pecans, or raisins.
Chill the frosted cake for 20 minutes before slicing for cleaner cuts.
