Slow Cooker Beef Tips in Rich Onion Gravy

Tender chunks of beef simmered low and slow in a savory onion gravy — this comforting crockpot dinner is perfect served over mashed potatoes, rice, or buttery noodles.

 

 

 

Ingredients

2 lbs beef stew meat

1 packet onion soup mix

1 can (14.5 oz) beef broth

1 can (10.5 oz) cream of mushroom soup

2 tablespoons Worcestershire sauce

3 cloves garlic, minced

1 teaspoon black pepper

1 tablespoon olive oil

2 tablespoons cornstarch

2 tablespoons water

Fresh parsley, chopped (for garnish)

 

 

 

Instructions

Heat the olive oil in a skillet over medium-high heat. Sear the beef stew meat for 2–3 minutes until lightly browned on the outside. This step adds extra flavor but can be skipped if you’re short on time.

Transfer the beef to the slow cooker.

In a bowl, whisk together the onion soup mix, beef broth, cream of mushroom soup, Worcestershire sauce, garlic, and black pepper.

Pour the mixture over the beef and stir gently to coat.

Cover and cook on:

Low: 7–8 hours

High: 4–5 hours

The beef should become fork-tender and full of rich flavor.

 

 

 

For a thicker gravy, mix the cornstarch and water in a small bowl to create a slurry. Stir it into the crockpot during the last 20 minutes of cooking.

Garnish with fresh parsley and serve warm over mashed potatoes, egg noodles, or rice.
