Tuscan Garlic Butter Ribeye Steak with Rosemary

Ingredients

 

1 pound ribeye steak, at least 1 inch thick

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

3 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (optional)

1 tablespoon fresh parsley, chopped, for garnish

Lemon wedges, for serving (optional)

 

 

 

Instructions

 

Prepare the Steak

Remove the ribeye from the refrigerator 30 minutes before cooking to allow it to come to room temperature.

 

Pat the steak dry with paper towels. Season generously on both sides with salt and black pepper.

 

Sear the Steak

Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.

 

Carefully place the steak in the hot skillet and sear for 4–5 minutes on the first side, without moving it, until a deep golden-brown crust forms.

 

 

 

Flip and Add Flavor

Turn the steak over and reduce the heat to medium.

 

Add the butter, minced garlic, chopped rosemary, and thyme (if using) to the skillet.

 

Baste to Perfection

As the butter melts, tilt the skillet slightly and use a spoon to continuously baste the steak with the aromatic garlic-herb butter for 3–5 minutes, or until the steak reaches your desired doneness:

Rare: 125°F (52°C)

Medium-rare: 135°F (57°C)

Medium: 145°F (63°C)

 

Rest the Steak

Transfer the steak to a cutting board and let it rest for 5–10 minutes. This helps the juices redistribute for maximum tenderness.

 

 

 

Serve

 

Slice against the grain and drizzle with the remaining garlic butter from the pan.

 

Garnish with fresh parsley and serve with lemon wedges, if desired.
