Golden, crispy on the outside and soft on the inside, these cheesy garlic smashed potatoes are loaded with flavor and topped with a rich, creamy cheese sauce. Perfect as a side dish or a satisfying snack!
Ingredients
12–14 small potatoes (baby or new potatoes work best)
3 tablespoons olive oil
3 cloves garlic, minced
Salt and black pepper, to taste
1 teaspoon paprika (optional, for extra flavor)
1 cup shredded mozzarella or cheddar cheese
1/2 cup heavy cream
1 tablespoon butter
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Boil the Potatoes
Place the potatoes in a large pot of salted water. Bring to a boil and cook for about 15–20 minutes, or until fork-tender. Drain and let them cool slightly.
Smash the Potatoes
Preheat your oven to 200°C (400°F). Place the potatoes on a baking sheet lined with parchment paper. Gently press each potato with the bottom of a glass or a fork until slightly flattened.
Season and Roast
In a small bowl, mix olive oil, minced garlic, salt, pepper, and paprika. Brush this mixture over the smashed potatoes.
Roast in the oven for 20–25 minutes, or until crispy and golden.
Prepare the Cheese Sauce
In a saucepan over medium heat, melt the butter. Add the heavy cream and bring to a gentle simmer. Stir in the shredded cheese and mix until smooth and creamy.
