Ultimate Cheesy Onion Enchilada Bake

 

If you’re craving something warm, cheesy, and completely irresistible, these Cheese and Onion Enchiladas are pure comfort food perfection. Soft tortillas are packed with sweet sautéed onions, smothered in rich enchilada sauce, and covered with bubbling melted cheese. Every bite is creamy, savory, and packed with bold flavor.

Ingredients

8 flour or corn tortillas

2 large onions, thinly sliced

2 tbsp butter or olive oil

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (15 oz) red enchilada sauce

½ cup sour cream

1 tsp garlic powder

1 tsp smoked paprika

Salt and black pepper to taste

Fresh parsley or cilantro for garnish

 

 

 

 

Instructions

1. Prepare the Onions

Heat butter or olive oil in a skillet over medium heat. Add the sliced onions and cook for 10–12 minutes until soft, golden, and slightly caramelized. Season with garlic powder, smoked paprika, salt, and pepper.

2. Make the Filling

In a bowl, combine the cooked onions with 1½ cups cheddar cheese and the sour cream. Mix until creamy and well blended.

3. Fill the Tortillas

Spread a little enchilada sauce in the bottom of a baking dish. Spoon the onion mixture into each tortilla, roll tightly, and place seam-side down in the dish.

4. Add the Sauce & Cheese

Pour the remaining enchilada sauce over the enchiladas. Top with the remaining cheddar cheese and mozzarella.

5. Bake

Bake in a preheated oven at 375°F (190°C) for 20–25 minutes, or until the cheese is melted, bubbly, and golden.

6. Serve

Let cool slightly, then garnish with fresh parsley or cilantro. Serve warm with sour cream, salsa, or guacamole.
