Tender, Slow-Braised Beef Roast with Melt-in-Your-Mouth Potatoes and Caramelized Onions
Nothing beats the comforting aroma of a classic pot roast slowly simmering to perfection. This hearty family favorite features juicy beef chuck roast, buttery potatoes, and sweet onions cooked in a rich, savory gravy that practically melts in your mouth.
Ingredients
3–4 lb (1.4–1.8 kg) chuck roast
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
2 large sweet onions, sliced
1½ lbs (700 g) baby potatoes, halved
3 carrots, cut into chunks
4 cloves garlic, minced
2 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon tomato paste
2 tablespoons cornstarch (optional, for thickening)
Fresh parsley, chopped, for garnish
Instructions
Season the Roast
Pat the chuck roast dry with paper towels.
Season generously with salt, pepper, garlic powder, onion powder, and thyme.
Sear for Flavor
Heat olive oil in a large Dutch oven or skillet over medium-high heat.
Sear the roast for 3–4 minutes per side until beautifully browned.
Prepare the Braising Liquid
In a bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste.
Layer the Vegetables
Place the sliced onions, potatoes, carrots, and minced garlic in the bottom of a slow cooker or roasting pan.
Set the seared roast on top.
Slow Cook to Perfection
Pour the broth mixture over the roast.
Cover and cook:
Slow Cooker: 8–9 hours on LOW or 5–6 hours on HIGH.
Oven: 3½–4 hours at 325°F (165°C), covered.
Make the Gravy (Optional)
Remove the roast and vegetables.
Mix cornstarch with 2 tablespoons cold water and stir into the cooking liquid.
Simmer until thickened into a rich gravy.
Serve
Shred or slice the beef and serve with the tender potatoes, onions, and carrots.
Spoon the savory gravy over everything and garnish with fresh parsley.
