Ingredients
8 frozen hash brown patties, thawed and cut into chunks
2 cups shredded sharp cheddar cheese
1 can (10.5 oz / 300 g) condensed cream of chicken soup
1 cup sour cream
½ cup melted butter
1 small onion, finely diced
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
Salt and black pepper, to taste
½ cup milk
Fresh parsley, chopped (for garnish)
Instructions
Lightly grease the inside of your slow cooker with cooking spray or butter.
In a large bowl, combine the cream of chicken soup, sour cream, melted butter, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth.
Stir in the diced onion and 1½ cups of the shredded cheddar cheese.
Fold in the hash brown pieces until evenly coated with the creamy cheese mixture.
Transfer everything to the slow cooker and spread into an even layer.
Cover and cook on Low for 4–5 hours or High for 2–3 hours, until the potatoes are tender and heated through.
Sprinkle the remaining ½ cup cheddar cheese over the top during the last 15 minutes of cooking.
Cover again and allow the cheese to melt completely.
