Ingredients
For the Filling:
– 1½ lbs (680 g) ground beef
– 1 small onion, diced
– 2 cloves garlic, minced
– 2 cups carrots, diced
– 1 cup frozen peas
– 2 tbsp tomato paste
– 2 tbsp Worcestershire sauce
– 2 cups beef broth
– 2 tbsp all-purpose flour
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 tsp paprika
– Salt and black pepper, to taste
– 1 tbsp olive oil
For the Mashed Potato Topping:
– 2½ lbs potatoes, peeled and cubed
– 4 tbsp butter
– ½ cup milk
– ½ cup shredded cheddar cheese (optional)
– Salt and black pepper, to taste
– Chopped fresh parsley for garnish
Instructions
1. Heat the olive oil in a skillet over medium-high heat. Brown the ground beef, then drain any excess grease.
2. Add the onion and garlic, cooking for 2–3 minutes until fragrant.
3. Stir in the flour and tomato paste, then add the Worcestershire sauce, beef broth, thyme, rosemary, paprika, salt, and pepper.
4. Transfer the mixture to the slow cooker and stir in the carrots.
5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
6. About 30 minutes before serving, stir in the frozen peas.
7. Meanwhile, boil the potatoes until tender. Drain and mash with the butter, milk, salt, pepper, and cheddar cheese if using.
8. Spread the mashed potatoes over the beef mixture. Cover and cook for another 20–30 minutes until heated through.
9. Garnish with fresh parsley and serve warm.
