Ingredients

1 large broccoli, cut into florets

1 tablespoon olive oil

A handful of baby kale

1 small onion, diced

7 small cloves garlic, minced

12 cherry or grape tomatoes, halved

1 zucchini, sliced

1 small carrot, grated

1 red bell pepper, diced

2 eggs

½ cup low-fat Greek yogurt

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley for garnish

 

 

 

 

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a casserole dish with olive oil.

Bring a pot of salted water to a boil and blanch the broccoli florets for 2–3 minutes. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Sauté the onion for 3 minutes until soft and fragrant.

Add the garlic, zucchini, carrot, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.

Stir in the baby kale and tomatoes, cooking just until the kale wilts slightly.

In a mixing bowl, whisk together the eggs, Greek yogurt, Italian seasoning, salt, and black pepper.

Add the cooked vegetables and broccoli to the casserole dish. Pour the egg mixture evenly over the top.

Sprinkle with mozzarella and Parmesan cheese.

Bake for 25–30 minutes, or until the casserole is golden on top and fully set in the center.

Garnish with fresh parsley and serve warm.
