A cozy, flavor-packed casserole that blends tender zucchini, creamy sauce, fluffy rice, and savory stuffing — the ultimate comfort food for family dinners or gatherings.

 

 

Ingredients:
• 6 cups sliced zucchini
• 1 cup chopped onion
• 1 cup shredded carrots
• 1 cup cooked white rice (long-grain or jasmine)
• 1 cup sour cream
• 1 (10.5 oz) can cream of chicken soup
• 1 (6 oz) box chicken-flavored Stove Top stuffing mix
• 1/2 cup softened butter
• Salt and pepper to taste (optional)

 

 

 

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the Vegetables: In a large mixing bowl, combine zucchini, onion, and carrots. Toss until evenly mixed.
  3. Mix the Base: Add the cooked rice, sour cream, and cream of chicken soup to the bowl. Stir until the mixture becomes creamy and well combined.
  4. Add the Stuffing: Fold in the Stove Top stuffing mix, making sure it’s distributed evenly throughout.
  5. Incorporate the Butter: Melt the butter and drizzle it over the mixture. Stir gently to coat. Season with salt and pepper if desired.
  6. Bake the Casserole: Spread the mixture evenly into the prepared baking dish. Bake for 30–35 minutes, or until bubbly and golden on top.
  7. Serve and Enjoy: Allow the casserole to rest for a few minutes before serving. Perfect as a side dish or a hearty main!
