Slow Cooker 4-Ingredient Ginger Ale Corned Beef
This easy slow-cooker corned beef uses a surprising ingredient—ginger ale—to make the meat incredibly tender. The gentle sweetness and carbonation help break down the meat while it slowly cooks all day. With just 4 ingredients, you’ll get juicy, melt-in-your-mouth slices and flavorful vegetables with almost no effort.
Ingredients
1 (3–4 lb) corned beef brisket with spice packet
2 cups ginger ale
1 large onion, sliced
3–4 carrots, cut into large pieces
Instructions
Prepare the slow cooker
Place the sliced onions and carrots in the bottom of the slow cooker.
Add the corned beef
Place the corned beef brisket fat side up on top of the vegetables.
Season
Sprinkle the spice packet that comes with the corned beef over the meat.
Pour the ginger ale
Slowly pour the ginger ale around the brisket until it mostly surrounds the meat.
Cook low and slow
Cover and cook on LOW for 8–9 hours, or
HIGH for 4–5 hours,
until the meat is very tender and easy to slice.
Rest and slice
Remove the corned beef from the slow cooker and let it rest for 5–10 minutes.
Slice across the grain for the most tender pieces.
Serve
Spoon the soft carrots and onions over the sliced meat and drizzle some of the golden cooking broth on top.
