These Hot Honey Lemon Pepper Chicken Skewers are juicy, smoky, sweet, and a little spicy. Tender chicken thighs are seasoned with bold lemon-pepper spices, grilled until slightly charred, then brushed with a sticky hot honey glaze that makes every bite irresistible.
Ingredients
For the Chicken
2 lbs boneless skinless chicken thighs, cut into 1½-inch chunks
2 tablespoons olive oil
2 teaspoons lemon pepper seasoning
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
For the Hot Honey Lemon Glaze
½ cup honey
1–2 tablespoons hot sauce (adjust for heat level)
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon butter

Instructions
1️⃣ Prepare the Skewers
If using wooden skewers, soak them in water for 20–30 minutes so they don’t burn while cooking.
2️⃣ Season the Chicken
In a large bowl combine:
chicken pieces
olive oil
lemon pepper seasoning
garlic powder
smoked paprika
kosher salt
Mix well until the chicken is evenly coated.
3️⃣ Assemble the Skewers
Thread the chicken pieces onto skewers, leaving a little space between each piece for even cooking.
4️⃣ Cook the Chicken
Grill Method
Preheat grill to medium-high heat (400°F / 200°C).
Grill skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.
Oven Method
Preheat oven to 425°F (220°C).
Place skewers on a lined baking sheet.
Bake 18–20 minutes, turning halfway through.
Air Fryer Method
Cook at 380°F (193°C) for 12–14 minutes, turning halfway.
Make the Hot Honey Lemon Glaze
In a small saucepan over low heat, combine:

hot sauce
lemon juice
lemon zest
butter
Stir until the butter melts and the sauce becomes smooth and glossy (about 2–3 minutes).
Finish the Skewers
