Ingredients
1 box (18 oz) brownie mix
1/4 cup all-purpose flour
2 large eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional, but delicious!)
Powdered sugar or sea salt for topping (optional)
Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix the Dough
In a large bowl, combine the brownie mix and flour. Add the eggs, vegetable oil, and vanilla extract. Stir until a thick cookie dough forms. Fold in the chocolate chips if using.
Shape the Cookies
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
Bake
Bake for 8–10 minutes, or until the edges are set but the centers still look slightly soft.
Cool & Enjoy
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Sprinkle with powdered sugar or a tiny pinch of sea salt for extra flavor.
Tips for the Best Brownie Cookies
Don’t overbake — the cookies will continue to set as they cool.
Add chopped walnuts, pecans, or white chocolate chips for extra texture.
Serve warm with a glass of milk or a scoop of vanilla ice cream.
These fudgy brownie cookies are the perfect quick dessert when you want something homemade without spending hours in the kitchen!
