Creamy Fruit Carlota Delight – No-Bake Mexican Icebox Dessert

Ingredients

For the Cream Filling

2 cans (12 oz each) evaporated milk

1 can (14 oz) sweetened condensed milk

1 package (8 oz) cream cheese, softened

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

For the Layers

2 packages Maria cookies (or graham crackers)

2 cups sliced strawberries

2 kiwis, peeled and sliced

1 cup diced mango

1 cup seedless grapes, halved

1 banana, sliced (optional)

For Garnish

Fresh fruit slices

Mint leaves

Crushed cookies

 

 

 

Instructions

In a blender, combine the evaporated milk, condensed milk, cream cheese, lemon juice, and vanilla extract. Blend until completely smooth and creamy.

Spread a thin layer of the cream mixture on the bottom of a rectangular serving dish.

Arrange a layer of Maria cookies over the cream.

Add a layer of the cream mixture, followed by a generous layer of mixed fresh fruit.

Repeat the layers (cookies, cream, and fruit) until all ingredients are used, finishing with a layer of cream on top.

Decorate with additional fruit slices, crushed cookies, and fresh mint leaves.

Cover and refrigerate for at least 4 hours, preferably overnight, to allow the cookies to soften and the flavors to blend beautifully.
