Ingredients

For the Baked Potatoes:

6 large russet baking potatoes

1 tablespoon olive oil

Salt, for the potato skins

For the Shepherd’s Pie Filling:

1 lb (450 g) lean ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 cup frozen peas and carrots

2 tablespoons tomato paste

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

½ teaspoon smoked paprika (optional)

Salt and freshly ground black pepper, to taste

1 tablespoon flour (optional, for a thicker filling)

For the Creamy Potato Topping:

Potato flesh scooped from the baked potatoes

2 tablespoons butter

¼ cup warm milk

½ cup shredded cheddar cheese (optional)

Salt and black pepper, to taste

Optional Garnish:

Fresh chopped parsley

Sliced green onions

Extra shredded cheddar cheese

 

 

 

Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean, pat dry, rub with olive oil, and sprinkle lightly with salt. Place directly on the oven rack or a baking tray and bake for 50–60 minutes, or until fork-tender.

While the potatoes bake, heat a large skillet over medium heat. Cook the ground beef with the diced onion until the beef is browned and the onion is soft. Drain excess grease if necessary.

Stir in the garlic and cook for about 1 minute until fragrant.

Add the tomato paste and cook for another minute. Pour in the beef broth, Worcestershire sauce, Italian seasoning, smoked paprika, peas, and carrots. If you prefer a thicker filling, stir in the flour. Simmer for 8–10 minutes until rich and slightly thickened. Season with salt and pepper.

Slice the baked potatoes in half lengthwise. Carefully scoop out most of the flesh, leaving a sturdy shell.

Mash the scooped potato with butter and warm milk until smooth and creamy. Mix in the cheddar cheese if using, then season to taste.

Fill each potato shell generously with the savory beef mixture.

Spoon or pipe the creamy mashed potatoes over the filling.

Sprinkle with extra cheddar cheese if desired.

Return to the oven and bake for 15–20 minutes, or broil for 2–3 minutes until the tops are lightly golden and slightly crispy.

Garnish with parsley or green onions and serve hot.
