Cheesy Layered Zucchini & Sweet Potato Gratin

A rich, creamy, and irresistibly cheesy baked vegetable casserole that’s perfect as a comforting side dish or a satisfying vegetarian dinner! Tender zucchini and sweet potatoes are layered with a silky garlic cream sauce, topped with bubbling cheese, and baked until golden brown. Every bite is packed with cozy homemade flavor.

 

 

 

Ingredients

For the Vegetables

2 medium zucchini, sliced into ¼-inch rounds

2 medium sweet potatoes, peeled and sliced into ¼-inch rounds (or substitute large carrots)

1 small onion, thinly sliced

2 cloves garlic, minced

For the Cream Sauce

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1½ cups whole milk

½ cup heavy cream

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

½ teaspoon dried thyme

Pinch of nutmeg (optional)

 

 

 

 

For the Topping

1½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

¼ cup mozzarella cheese

2 tablespoons chopped fresh parsley

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk and heavy cream until smooth.

Add the garlic, salt, pepper, paprika, thyme, and nutmeg. Simmer for 3–5 minutes until the sauce thickens slightly.

Arrange a layer of sweet potato slices in the baking dish, followed by zucchini and onion slices. Spoon a little cream sauce over the vegetables and sprinkle with cheddar cheese.

Repeat the layers until all the vegetables, sauce, and cheese are used, finishing with the remaining cheddar, mozzarella, and Parmesan on top.

Cover with foil and bake for 40 minutes.

Remove the foil and bake for another 20–25 minutes, or until the vegetables are tender and the cheese is melted, bubbly, and beautifully golden.

Let the gratin rest for 10 minutes before serving, then garnish with fresh parsley.
