Turn leftover mashed potatoes into a crispy, cheesy appetizer or side dish everyone will love! These golden potato puffs are fluffy on the inside, perfectly crisp on the outside, and packed with rich cheddar and Parmesan flavor. They’re easy to make, freezer-friendly, and perfect for snacks, parties, or family dinners.
Ingredients
– 2 cups mashed potatoes (leftover or freshly made)
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 2 large eggs
– 1/4 cup milk
– 2 green onions, finely chopped
– Salt and black pepper, to taste
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1 tablespoon chopped fresh parsley (optional)
– Butter or nonstick cooking spray for greasing the muffin pan
Instructions
1. Preheat your oven to 400°F (200°C) and lightly grease a 12-cup mini or standard muffin tin.
2. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, garlic powder, onion powder, parsley (if using), salt, and black pepper. Stir until the mixture is smooth and evenly combined.
3. Spoon the potato mixture into the prepared muffin cups, filling each about three-quarters full. Sprinkle a little extra cheddar or Parmesan on top for a crisp, golden finish.
4. Bake for 25–30 minutes, or until the tops are puffed, lightly browned, and the edges are crisp.
5. Let the potato puffs cool in the pan for 5 minutes before gently removing them.
6. Serve warm with sour cream, ranch dressing, garlic aioli, or your favorite dipping sauce.
Tips
– Add crumbled bacon, diced ham, or cooked broccoli for extra flavor.
– Swap cheddar for mozzarella, Monterey Jack, or pepper Jack for a different cheesy twist.
