Ingredients
For the Cream Puffs
1 cup water
½ cup unsalted butter
¼ teaspoon salt
1 tablespoon granulated sugar
1 cup all-purpose flour
4 large eggs

2 cups cold heavy whipping cream
1 cup powdered sugar
1 package (3.4 oz) instant vanilla pudding mix
1 teaspoon pure vanilla extract

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine the water, butter, salt, and sugar. Bring to a gentle boil over medium heat.
Remove from the heat and immediately stir in the flour until a smooth dough forms.
Return the pan to low heat and cook for about 1–2 minutes, stirring constantly until the dough pulls away from the sides.
Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
Add the eggs one at a time, beating well after each addition until the dough becomes smooth, glossy, and thick.
Drop or pipe tablespoon-sized mounds onto the prepared baking sheet, leaving space between each puff.
Bake for 30–35 minutes, or until the puffs are deep golden brown and crisp. Do not open the oven during baking.
Remove from the oven and poke a small hole in each puff to release steam. Cool completely on a wire rack.
To prepare the filling, beat the cream cheese until smooth. Add the powdered sugar, pudding mix, vanilla, and milk if needed. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until light and fluffy.
Slice each cooled cream puff in half and generously fill with the vanilla cream. Replace the tops.
