Ingredients

3–4 lb (1.4–1.8 kg) beef chuck roast

2 large yellow onions, sliced

5 garlic cloves, minced

3 tbsp unsalted butter

2 tbsp olive oil

2 sprigs fresh rosemary

1 tsp dried thyme

1 tsp onion powder

1 tsp garlic powder

1 tsp smoked paprika

1 tsp kosher salt

½ tsp freshly ground black pepper

1 cup (240 ml) beef broth

1 tbsp Worcestershire sauce

1 tsp Dijon mustard (optional, for extra depth)

1 tbsp cornstarch (optional)

2 tbsp cold water (optional)

 

 

 

 

Instructions

Prepare the slow cooker: Spread the sliced onions evenly across the bottom of the slow cooker to create a flavorful base.

Season the roast: Pat the beef dry with paper towels, then season generously with the salt, pepper, paprika, garlic powder, onion powder, and thyme.

Optional sear: Heat a large skillet over medium-high heat with a drizzle of olive oil. Sear the roast for 2–3 minutes per side until deeply browned.

Transfer: Place the roast on top of the onions and tuck the rosemary sprigs around the meat.

Make the garlic butter: Melt the butter with the olive oil in a small saucepan. Stir in the minced garlic and cook for about 1 minute until fragrant. Pour the mixture over the roast.

Add the liquid: Mix the beef broth, Worcestershire sauce, and Dijon mustard (if using), then pour around the sides of the roast.

 

 

 

 

Slow cook: Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the beef is fork-tender and easily shreds.

Finish the gravy: Remove the roast and rosemary sprigs. For a thicker gravy, whisk together the cornstarch and cold water, stir it into the cooking liquid, and cook on HIGH for 10–15 minutes until thickened.

Serve: Slice or shred the roast and spoon plenty of the rich onion gravy over the top before serving.
