Ingredients

For the Creamy Mashed Potatoes

4 medium potatoes, peeled and diced

2 tbsp butter

⅓ cup warm milk

Salt and freshly ground black pepper, to taste

For the Garlic Butter Green Beans

2 cups fresh green beans, trimmed

1 tbsp butter

2 cloves garlic, minced

Pinch of salt and black pepper

For the Honey-Roasted Carrots

3 cups baby carrots

1 tbsp olive oil

1 tsp honey or brown sugar

½ tsp paprika

Salt and black pepper, to taste

For Serving

4 pieces warm cornbread

2 tbsp butter (for serving, optional)

Fresh parsley, chopped (optional garnish)

 

 

 

 

Instructions

Prepare the Mashed Potatoes:

Place the potatoes in a large pot of salted water and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain well, then mash with the butter and warm milk until smooth and creamy. Season generously with salt and pepper.

Cook the Green Beans:

Bring a pot of lightly salted water to a boil and blanch the green beans for 3–4 minutes. Drain and transfer to a skillet. Add the butter and minced garlic, then sauté for 2–3 minutes until fragrant and the beans are crisp-tender. Season with salt and pepper.

Roast the Carrots:

Preheat the oven to 400°F (200°C). Toss the carrots with olive oil, honey, paprika, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 20–25 minutes, stirring halfway through, until tender and beautifully caramelized.

Warm the Cornbread:

Heat the cornbread in the oven for 5 minutes or microwave briefly until warm.

Assemble the Plate:

Spoon the creamy mashed potatoes onto each plate, add the garlic butter green beans and roasted carrots, then serve with a warm slice of cornbread. Top the mashed potatoes with an extra pat of butter and garnish with fresh parsley if desired.
