Creamy Zucchini & Sweet Corn Chowder
A warm, creamy bowl of comfort loaded with tender zucchini, sweet corn, hearty vegetables, and smoky turkey bacon. This easy one-pot chowder is perfect for cozy dinners and comes together with simple, wholesome ingredients.
Ingredients
1 tablespoon butter
2 strips turkey bacon, chopped
1 cup yellow onion, finely chopped
2 celery ribs, chopped
1 medium carrot, peeled and diced
2 medium zucchini, diced
2 cups sweet corn kernels (fresh, frozen, or canned)
2 cloves garlic, minced
3 tablespoons all-purpose flour
4 cups chicken or vegetable broth
1 cup whole milk or half-and-half
½ cup heavy cream (optional, for extra richness)
1 teaspoon dried thyme
½ teaspoon smoked paprika
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped
Shredded cheddar cheese, for garnish (optional)
Instructions
Melt the butter in a large pot over medium heat. Add the turkey bacon and cook until lightly crisp.
Stir in the onion, celery, and carrot. Sauté for 5–6 minutes until softened.
Add the garlic and cook for 30 seconds until fragrant.
Sprinkle the flour over the vegetables and stir continuously for 1 minute.
Slowly pour in the broth while whisking to create a smooth base.
Add the zucchini, corn, thyme, smoked paprika, salt, and pepper. Bring to a gentle boil.
Reduce the heat and simmer for 15–20 minutes, or until the vegetables are tender.
Stir in the milk and heavy cream. Simmer for another 5 minutes without boiling.
Taste and adjust the seasoning. Sprinkle with fresh parsley and top with shredded cheddar if desired.
Serve hot with crusty bread or buttery crackers for a comforting meal.
