Teriyaki Chicken & Pineapple Foil Packets

Ingredients:

2 boneless, skinless chicken breasts

1 cup fresh pineapple chunks

1/4 cup teriyaki sauce

1 tablespoon olive oil

1 red bell pepper, thinly sliced

1 carrot, cut into thin slices

1 zucchini, sliced into rounds

2 green onions, chopped

Salt and freshly ground black pepper, to taste

Aluminum foil, for wrapping

Instructions:

1. Prepare the foil: Cut out 2 large sheets of aluminum foil. Lightly brush each with olive oil to prevent sticking.

2. Assemble the packets: Place one chicken breast in the center of each foil sheet. Surround with pineapple chunks, bell pepper, carrot, and zucchini.

3. Season & sauce: Drizzle teriyaki sauce over the chicken and vegetables. Sprinkle with salt and pepper, then scatter the chopped green onions on top.

4. Seal the packets: Fold the foil tightly around the ingredients to form a sealed pouch, keeping the juices inside.

5. Cook: Preheat your grill or oven to 400°F (200°C). Place the foil packets directly on the grill or on a baking sheet in the oven. Cook for 20–25 minutes, until the chicken is fully cooked and the vegetables are tender.

6. Serve: Carefully open the foil packets (watch out for the hot steam!) and enjoy the flavorful blend of sweet pineapple and savory teriyaki chicken.
