Christmas Cranberry Orange & White Chocolate Cupcakes
These cupcakes are the perfect blend of tart cranberries, zesty orange, and creamy white chocolate — a festive treat that tastes just like Christmas in every bite!
Ingredients
For the Cupcakes:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup orange juice
1 tbsp orange zest
1 cup fresh cranberries (chopped if large)
½ cup white chocolate chips
For the Frosting:
1 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2 tbsp orange juice
½ cup white chocolate chips, melted

Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper cupcake liners.
2. Prepare the Batter
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the butter and sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, orange juice, and orange zest.
Gradually stir in the dry ingredients until just combined.
Fold in the chopped cranberries and white chocolate chips.
3. Bake the Cupcakes
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
4. Make the Frosting
Beat the softened butter until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating until light and fluffy.
Mix in the vanilla extract and orange juice.
Melt the white chocolate chips in 20-second intervals in the microwave, stirring between each until smooth. Let cool slightly, then beat into the frosting until well combined.
5. Frost and Decorate
Once the cupcakes are completely cooled, frost them generously with the orange white chocolate frosting.
Use a piping bag for a decorative swirl or spread with a spatula.
Finish with a sprinkle of fresh orange zest for a festive look.
