Virginia’s Fresh Apple Cake

This cherished recipe comes from my mother-in-law. Every year, she would bake this Fresh Apple Cake for my husband’s birthday and again for Christmas. As she got older, she needed help stirring the batter, so I began assisting her — and that’s how I learned her special way of making it. Since then, I’ve carried on her delicious tradition.

 

 

 

Ingredients:

  • 1½ cups oil
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 2 large eggs
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1 cup white raisins
  • 1 cup chopped pecans
  • 3 cups chopped fresh apples
  • ½ cup shredded coconut
  • ½ cup chopped red cherries
  • ¼ tsp cinnamon
  • ⅛ tsp cloves
  • ⅛ tsp nutmeg

 

 

 

Instructions:

  1. Combine all ingredients in a large mixing bowl and stir until well blended.
  2. Pour the batter into a greased baking pan.
  3. Bake at 325°F (160°C) for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
