Virginia’s Fresh Apple Cake
This cherished recipe comes from my mother-in-law. Every year, she would bake this Fresh Apple Cake for my husband’s birthday and again for Christmas. As she got older, she needed help stirring the batter, so I began assisting her — and that’s how I learned her special way of making it. Since then, I’ve carried on her delicious tradition.
Ingredients:
- 1½ cups oil
- 2 cups sugar
- 3 cups all-purpose flour
- 2 large eggs
- 1½ tsp baking soda
- 1 tsp salt
- 2 tsp vanilla extract
- 1 cup white raisins
- 1 cup chopped pecans
- 3 cups chopped fresh apples
- ½ cup shredded coconut
- ½ cup chopped red cherries
- ¼ tsp cinnamon
- ⅛ tsp cloves
- ⅛ tsp nutmeg
Instructions:
- Combine all ingredients in a large mixing bowl and stir until well blended.
- Pour the batter into a greased baking pan.
- Bake at 325°F (160°C) for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
