This recipe is perfect if you want to experiment with aging flavors quickly using charred oak chips in a jar instead of a traditional barrel. You can adjust char level and add extra flavors like cherry wood, vanilla, or honey to create your own unique spirit.

 

 

 

Ingredients:

  • 1 liter high-proof neutral spirit (vodka, Everclear, or unflavored moonshine)
  • Oak chips (amount depends on desired intensity; start with 2–4 tablespoons)
  • Optional:
    • 1–2 charred cherry wood chips
    • ½ vanilla bean, split lengthwise
    • 1–2 teaspoons honey (optional, for a touch of sweetness)

 

 

Instructions:

  1. Prepare Oak Chips:
    • Preheat your oven to 250°F (120°C).
    • Spread oak chips on a baking sheet.
    • Char in the oven:
      • Medium char: 2 hours
      • Heavy char: 3 hours
    • Let cool before adding to your jar.
  2. Combine Ingredients:
    • Place the charred oak chips in a clean glass jar.
    • Add the optional flavorings (cherry wood, vanilla bean, honey).
    • Pour the high-proof spirit over the chips and flavorings. Make sure all solids are submerged.
  3. Seal and Store:
    • Seal the jar tightly.
    • Store in a cool, dark place. Shake gently once a day for the first few days to mix flavors.
  4. Taste Test and Adjust:
    • After 2–3 days, begin tasting your spirit. The oak will infuse quickly because of the small chips and char.
    • Adjust flavor intensity:
      • Add more oak chips for stronger wood flavor.
      • Remove chips if the flavor is strong enough.
      • Honey or vanilla can be adjusted to taste.
  5. Final Steps:
    • Once satisfied with flavor (usually 5–10 days for small charred chips, longer for heavier char), strain the liquid through a fine mesh or coffee filter into a clean jar or bottle.
    • Seal and store. Your homemade oak-infused spirit is ready to sip, mix in cocktails, or use in recipes.

 

 

 

Tips:

  • Smaller chips with medium char give subtle oak notes. Heavily charred chips provide smoky, caramelized flavors.
  • Cherry wood adds a sweet, fruity note.
  • Honey and vanilla can smooth harsh alcohol notes.
  • Experiment in small jars first—you can always blend batches for balance.
