Sugar-Free Oat, Apple & Carrot Bake
No flour • Naturally sweetened • Wholesome & filling
Ingredients:
- 2 cups (200 g) rolled oats, lightly blended into a coarse flour
- 1 teaspoon baking powder
- 1 cup (240 ml) milk of your choice (dairy or plant-based)
- 1 medium carrot, finely grated
- 1 apple, grated (with peel for more fiber)
- 9 dried apricots, rinsed with hot water and finely chopped
- 4 tablespoons raisins, rinsed with hot water
- 1 teaspoon ground cinnamon
- 3 eggs
Instructions:
- Prepare the Oven
Preheat your oven to 180°C (350°F). Lightly grease or line a baking dish (about 20×20 cm / 8×8 inch). - Mix Dry Ingredients
In a large bowl, combine the blended oats, baking powder, and cinnamon. - Add Wet Ingredients
In a separate bowl, whisk the eggs and milk together. Pour the mixture into the dry ingredients and stir until well combined. - Add Fruits & Vegetables
Fold in the grated carrot, grated apple, chopped apricots, and raisins. Mix gently until everything is evenly distributed. - Bake
Pour the batter into the prepared baking dish and smooth the top.
Bake for 35–40 minutes, or until the top is set and a toothpick inserted in the center comes out clean. - Cool & Serve
Let it cool for 10 minutes before slicing. Enjoy warm or chilled.
Serving Ideas (Optional):
- Serve with plain yogurt
- Add a spoon of nut butter on top
- Enjoy as a healthy breakfast, snack, or light dessert
