Ingredients
500 g ground beef
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
3 medium potatoes, peeled and diced
2 carrots, peeled and sliced
2 tablespoons tomato paste
1 can (400 g) crushed tomatoes
5 cups beef broth
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon chili flakes (optional)
1 bay leaf
½ cup small pasta or rice (optional)
Fresh parsley, finely chopped (for garnish)
Instructions
Sauté the aromatics
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 4–5 minutes, until soft and translucent. Stir in the garlic and cook for another minute until fragrant.
Brown the beef
Add the ground beef, breaking it apart with a spoon. Cook until fully browned and nicely caramelized for deeper flavor.
Build the base
Stir in the tomato paste and cook for 1–2 minutes to intensify its richness. Add the crushed tomatoes and mix well.
Add broth and vegetables
Pour in the beef broth and bring to a gentle boil. Add the diced potatoes and carrots, stirring to combine.
Season and simmer
Add paprika, oregano, salt, black pepper, chili flakes (if using), and the bay leaf. Reduce heat to low and let the soup simmer for 25–30 minutes, until the vegetables are tender.
Optional addition
If using pasta or rice, stir it in during the last 10–12 minutes of cooking and cook until tender.
Final touches
Taste and adjust seasoning as needed. Remove the bay leaf before serving.
