A perfect balance of sweet, savory, and creamy flavors, this stuffed chicken dish feels restaurant-worthy but is surprisingly simple to make at home. Tender chicken breasts are filled with a rich fig and goat cheese mixture, then finished with a luscious red wine sauce.
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and black pepper, to taste
For the filling:
1/2 cup dried figs, finely chopped
4 oz (115 g) goat cheese, softened
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
1/4 cup chopped walnuts (optional, for crunch)
For the red wine reduction:
1 cup red wine
1/2 cup chicken broth
1 tablespoon balsamic vinegar
1 tablespoon honey
2 tablespoons butter
Instructions
Preheat the oven to 375°F (190°C).
Prepare the chicken:
Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Season both the inside and outside with salt and pepper.
Make the filling:
In a bowl, combine the chopped figs, goat cheese, thyme, and walnuts (if using). Mix until smooth and well blended.
Stuff the chicken:
Spoon the filling evenly into each chicken breast. Secure with toothpicks if needed to keep the filling inside.
Sear for flavor:
Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken for about 3–4 minutes per side, until golden brown.
Bake to perfection:
Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Remove from the skillet and set aside.
Prepare the sauce:
In the same skillet, add red wine, chicken broth, balsamic vinegar, and honey. Bring to a gentle simmer, scraping up any flavorful browned bits from the pan.
Reduce and finish:
Let the sauce simmer for 8–10 minutes, until slightly thickened. Stir in the butter until the sauce becomes glossy and smooth.
Combine and serve:
Return the chicken to the skillet and spoon the sauce over the top to coat.
