No-Bake “Rum” Balls

Ingredients
- 3 cups vanilla wafer cookie crumbs
- 1½ cups finely ground walnuts
- ⅔ cup powdered sugar
- ¼ cup cocoa powder
- 1 teaspoon vanilla extract
- 1–2 teaspoons rum extract (to taste)
- 3 tablespoons light corn syrup
- 3–5 tablespoons milk or orange juice (as needed)
Optional Coatings
- Nonpareils sprinkles
- Chopped walnuts
- Candy bar crumbs
- Powdered sugar
- Chocolate jimmies sprinkles
- Dutch-process cocoa powder
Instructions
- Mix the Dry Ingredients
In a large bowl, combine cookie crumbs, ground walnuts, powdered sugar, and cocoa powder. Mix well. - Add Flavorings
Stir in vanilla extract, rum extract, and corn syrup until evenly combined. - Adjust Texture
Add milk or orange juice 1 tablespoon at a time until the mixture is moist enough to hold together when pressed. - Shape the Balls
Roll mixture into 1-inch balls using your hands. - Coat the Balls
Roll each ball in your chosen coating and place on a parchment-lined tray. - Chill
Refrigerate for at least 1 hour to firm up. - Serve or Store
Serve chilled or at room temperature.
Tips
- For a stronger “rum” flavor, add rum extract gradually—it’s powerful.
- These improve in flavor after resting overnight in the fridge.
- Store in an airtight container in the refrigerator for up to 1 week.
