 No-Bake “Rum” Balls

Ingredients

  • 3 cups vanilla wafer cookie crumbs
  • 1½ cups finely ground walnuts
  • ⅔ cup powdered sugar
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons rum extract (to taste)
  • 3 tablespoons light corn syrup
  • 3–5 tablespoons milk or orange juice (as needed)

Optional Coatings

  • Nonpareils sprinkles
  • Chopped walnuts
  • Candy bar crumbs
  • Powdered sugar
  • Chocolate jimmies sprinkles
  • Dutch-process cocoa powder

Instructions

  1. Mix the Dry Ingredients
    In a large bowl, combine cookie crumbs, ground walnuts, powdered sugar, and cocoa powder. Mix well.
  2. Add Flavorings
    Stir in vanilla extract, rum extract, and corn syrup until evenly combined.
  3. Adjust Texture
    Add milk or orange juice 1 tablespoon at a time until the mixture is moist enough to hold together when pressed.
  4. Shape the Balls
    Roll mixture into 1-inch balls using your hands.
  5. Coat the Balls
    Roll each ball in your chosen coating and place on a parchment-lined tray.
  6. Chill
    Refrigerate for at least 1 hour to firm up.
  7. Serve or Store
    Serve chilled or at room temperature.

 

Tips

  • For a stronger “rum” flavor, add rum extract gradually—it’s powerful.
  • These improve in flavor after resting overnight in the fridge.
  • Store in an airtight container in the refrigerator for up to 1 week.
