Dark Chocolate Mousse with Orange Zest

This classic French-style mousse relies on eggs for structure, dark chocolate for depth, and orange zest for brightness. The result is rich but not heavy, with a smooth, melt-in-the-mouth texture.

 

 

 

Ingredients (Serves 4–6)

Main Ingredients

200 g dark chocolate (70% cocoa) – chopped

(Use good-quality chocolate for the best flavor)

3 large eggs, separated

(Room temperature works best)

2 tablespoons sugar

(White or caster sugar)

1 pinch of salt

Zest of 1 orange

(Only the orange part, no white pith)

Optional Add-Ins (choose one or more)

½ tsp vanilla extract

½ tsp orange blossom water

½ tsp ground cinnamon

1 tsp fresh orange juice (for extra citrus)

 

 

 

 

Step-by-Step Instructions

1️⃣ Melt the Chocolate

Place the chopped chocolate in a heatproof bowl.

Set it over a saucepan of gently simmering water (bain-marie).

Stir slowly until fully melted and smooth.

Remove from heat and let cool slightly (warm, not hot).

 

 

 

Tip: Chocolate that’s too hot can scramble the eggs.

2️⃣ Whisk the Egg Yolks

In a bowl, whisk the egg yolks + sugar until:

Pale in color

Thick and creamy

Add orange zest and any optional flavorings.

3️⃣ Combine Chocolate & Yolks

Slowly fold the yolk mixture into the melted chocolate.

Stir gently until glossy and uniform.

4️⃣ Beat the Egg Whites

In a clean, dry bowl, beat egg whites + salt.

Beat until stiff peaks form (they should hold their shape).

 

 

 

Test: Turn the bowl slightly—whites should not slide.

5️⃣ Fold (Very Gently!)

Add ⅓ of the egg whites to the chocolate mixture.

Stir gently to loosen the texture.

Add the remaining whites in two additions, folding carefully with a spatula.

Do NOT stir hard—this keeps the mousse airy and light.

6️⃣ Chill & Set

Spoon the mousse into glasses, cups, or ramekins.

Cover and refrigerate for at least 2 hours

(4 hours is even better)

 

 

 

 

Garnish & Serve

Top just before serving with:

Fresh orange zest

Dark chocolate shavings or curls

Cocoa powder or powdered sugar

Fresh berries (optional)

Serve chilled
