Spiced Yogurt Marinade for Tender Magic

This yogurt-based marinade is a timeless kitchen secret. It tenderizes meat or vegetables while infusing them with warm spices, gentle acidity, and deep flavor. Ideal for grilling, roasting, baking, or pan-frying.

 

 

 

Ingredients

(Serves 4 | For 800 g – 1 kg meat or vegetables)

1 cup plain yogurt (full-fat preferred for richness)

2 teaspoons sweet paprika

1 teaspoon turmeric

1 teaspoon ground coriander

1 garlic clove, finely crushed or grated

Juice of ½ lemon

Salt to taste

Freshly ground black pepper to taste

Optional but recommended:

1–2 tablespoons olive oil  (adds silkiness and prevents sticking)

Meat: chicken thighs or breast, lamb cubes, beef strips, turkey, shrimp

Preparation (Step-by-Step)

1️⃣ Make the Marinade

In a medium bowl, whisk together the yogurt, paprika, turmeric, ground coriander, garlic, lemon juice, salt, pepper, and olive oil (if using).

Mix until smooth, creamy, and evenly colored.

Tip: Taste the marinade — it should be lightly tangy, warmly spiced, and well-seasoned.

2️⃣ Prepare the Meat or Vegetables

Pat meat dry with paper towels.

Cut into evenly sized pieces for uniform cooking.

For vegetables, make sure they are dry and evenly chopped.

3️⃣ Marinate with Care

Add the meat or vegetables to the bowl.

Using clean hands or a spoon, massage the marinade thoroughly so every piece is coated.

This step helps the yogurt and spices penetrate deeply.

4️⃣ Rest & Chill

Cover the bowl and refrigerate:

Minimum: 2 hours

Ideal: 6–8 hours

Maximum: 12 hours (for meat), 4 hours (for vegetables)
