Similar to classic beef stew but lighter and quicker thanks to tender chicken thighs, this recipe delivers juicy chicken, soft vegetables, and a rich, creamy broth—ideal for cold days or busy weeknights.
Ingredients
2 tablespoons olive oil
1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
3 tablespoons all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon salt (plus more for seasoning)
Black pepper, to taste
6 cloves garlic, minced
1 onion, diced
3 carrots, peeled and sliced
2 large potatoes (about 1 pound), cut into ½-inch cubes
3 cups chicken broth
1 bay leaf
½ cup milk
1 cup frozen green peas
Step-by-Step Instructions
1️⃣ Prep the Chicken
Place chicken on a cutting board and dice into 1-inch pieces.
Season generously with salt and black pepper.
2️⃣ Sear for Flavor
Heat olive oil in a large skillet over medium heat.
Add the chicken and cook for 4–5 minutes until browned on all sides.
