Ingredients

For the Beef Patties:

1 lb ground chuck (80/20 fat ratio)

1 tsp kosher salt

½ tsp cracked black pepper

½ tsp garlic powder

1 tbsp vegetable oil

For the Green Chile Topping:

1 cup roasted Hatch green chiles, chopped

¼ white onion, finely diced

1 clove garlic, minced

½ tsp ground cumin

For the Assembly:

4 slices sharp cheddar or white American cheese

4 brioche buns, halved

2 tbsp unsalted butter, softened

¼ cup mayonnaise

For Garnish:

4 leaves green leaf lettuce

4 thick slices heirloom tomato

Step-by-Step Directions

1️⃣ Make the Green Chile Topping

Heat a small skillet over medium heat.

Add a drizzle of oil if needed and sauté the diced onion for 3–4 minutes until translucent.

Add the minced garlic and cook for 30 seconds until fragrant.

Stir in the chopped green chiles and ground cumin.

Cook for 3 minutes, stirring occasionally, until softened and aromatic.

Remove from heat and set aside.

2️⃣ Prepare the Patties

Divide the ground chuck into four equal portions (about 4 ounces each).

Gently shape into patties slightly wider than your buns.

Press a shallow indent into the center of each patty (prevents puffing).

Season both sides with salt, pepper, and garlic powder.

3️⃣ Toast the Buns

Spread softened butter on the cut sides of the brioche buns.

Toast in a hot skillet until golden brown and lightly crisp.

Set aside.

4️⃣ Cook the Burgers

Heat a heavy cast-iron skillet or griddle over high heat until just smoking.

Add vegetable oil.

Sear patties for about 3 minutes without moving them (creates a deep crust).

Flip the patties.

Immediately add a slice of cheese on each patty.

Spoon a generous amount of the warm green chile mixture over the cheese.

Cover the skillet with a lid for about 1 minute to melt the cheese completely.

For medium doneness, internal temperature should reach 145–150°F.

5️⃣ Assemble the Burgers

Spread mayonnaise on the toasted buns.

Add lettuce and tomato to the bottom bun.

Place the cheesy green chile patty on top.

Add the top bun and gently press.

Serve immediately while hot and melty!
