Ingredients (Serves 6)

2 to 2.5 lbs (900 g – 1.1 kg) beef chuck roast or stewing beef

3–4 large onions, thinly sliced

1 packet onion soup mix (or dry beefy onion seasoning mix)

Instructions

Layer the onions in the bottom of your slow cooker. Don’t be shy—this is what creates that rich, natural gravy.

Add the beef on top of the onions in a single layer if possible.

Sprinkle the onion soup mix evenly over the beef. No need to add water or broth—the onions will release plenty of moisture as they cook.

Cover and cook on low for 8–10 hours or on high for 4–5 hours, until the beef is fork-tender and the onions have melted into a thick, flavorful gravy.
