Sizzling Chinese-Style Beef & Onion Stir-Fry

Sizzling Chinese-Style Beef & Onion Stir-Fry
A fast, flavor-packed stir-fry with tender slices of beef, sweet caramelized onions, and a glossy savory sauce. This dish comes together in minutes and delivers that authentic takeout-style taste right at home.
Ingredients (Serves 2–3)
400 g beef (sirloin or tenderloin), thinly sliced
2 medium onions, sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional, for deeper flavor)
1 teaspoon sugar
1 tablespoon cornstarch
2 tablespoons water
1 clove garlic, minced
1 teaspoon fresh ginger, grated (optional)
2 tablespoons vegetable oil (sunflower or peanut)
Black pepper, to taste
Preparation Method
1. Slice the Beef (Key Step)
Cut the beef into thin strips against the grain.
This breaks down the muscle fibers, resulting in more tender meat.
2. Quick Marinade (10–15 minutes)
In a bowl, combine:
Beef slices
1 tablespoon soy sauce
Cornstarch
Water
Mix well and let sit.
The cornstarch forms a light coating, helping the beef stay juicy and tender (a classic Chinese technique known as velveting).
3. Stir-Fry (Cook Quickly & Hot)
Heat a wok or pan over high heat until very hot.
Add oil, then sear the beef for 1–2 minutes max until just browned. Remove and set aside.
Do not overcook — the beef should stay tender.
In the same pan, stir-fry onions, garlic, and ginger until fragrant.
Keep the onions slightly crisp, not mushy.
Return the beef to the pan.
Add remaining soy sauce, oyster sauce, sugar, and black pepper.
Toss everything together for 30–60 seconds.
The sauce should lightly coat the ingredients — glossy, not watery.
Expected Result
Tender, juicy beef
Soft yet slightly crisp onions
A rich, shiny, lightly thickened sauce
Pro Cooking Tips
Use very high heat to achieve proper stir-fry texture
