Fresh Cucumber Herb Salad (Light & Tangy Summer Side)

 

 

Ingredients:

2 English cucumbers, thinly sliced

1/2 red onion, julienned

1 cup fresh cilantro, chopped

1/2 cup white vinegar

Optional additions for better flavor balance:

1–2 tablespoons olive oil

1 teaspoon sugar or honey

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

A pinch of chili flakes (optional for heat)

 

 

 

Instructions:

Slice the cucumbers thinly and place them in a large mixing bowl.

Add the julienned red onion and chopped cilantro.

In a small bowl, whisk together the white vinegar with salt, sugar (if using), and olive oil until well combined.

Pour the dressing over the vegetables and toss gently until everything is evenly coated.

Let the salad rest for 10–15 minutes to allow the flavors to blend.

Serve chilled or at room temperature.

Tip: For extra crunch and freshness, chill the cucumbers before preparing the salad.
