Mediterranean Grilled Cheese with Ricotta, Spinach & Sun-Dried Tomatoes
Golden, crisp sourdough filled with creamy ricotta, tender spinach, and sweet tangy sun-dried tomatoes—this Mediterranean-inspired grilled cheese is anything but ordinary. It’s rich, flavorful, and wonderfully satisfying, making it perfect for a quick lunch, light dinner, or elegant weekend brunch. Every bite offers a delicious balance of creamy, savory, and fresh flavors.
Ingredients
2 slices sourdough bread
2 tablespoons olive oil, divided
1/4 cup ricotta cheese
1/4 cup fresh spinach, roughly chopped
2 tablespoons sun-dried tomatoes, finely chopped
1/4 cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese
1/4 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Optional: a pinch of red pepper flakes for a little heat
Instructions
In a small bowl, combine the ricotta cheese, chopped spinach, sun-dried tomatoes, Parmesan cheese, oregano, and a pinch of salt and pepper. Mix until well blended.
Spread the ricotta mixture evenly over one slice of sourdough bread. Sprinkle the shredded mozzarella over the top, then place the second slice of bread on top.
Brush the outside of both slices of bread with olive oil.
Heat a skillet or griddle over medium heat. Place the sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crisp and the cheese is melted.
Remove from the skillet and let rest for 1 minute before slicing.
Serve warm, cut in half, with a fresh salad, a bowl of tomato soup, or your favorite dipping sauce.
Tips
For extra flavor, add a few fresh basil leaves before grilling.
Swap mozzarella for crumbled feta for an even more Mediterranean twist.
A drizzle of balsamic glaze just before serving adds a wonderful sweet-tangy finish.
