Ingredients
1 pound breakfast sausage
8 ounces cream cheese, softened
1 can (10 ounces) Rotel diced tomatoes with green chilies, well drained
2 cups shredded sharp cheddar cheese
2 cups baking mix (such as Bisquick)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the sausage and softened cream cheese until well blended.
Stir in the drained Rotel tomatoes, shredded cheddar cheese, baking mix, garlic powder, onion powder, and black pepper. Mix until everything is evenly incorporated.
Roll the mixture into 1-inch balls and place them on the prepared baking sheet, spacing them slightly apart.
Bake for 20 to 25 minutes, or until the sausage balls are cooked through and golden brown.
Remove from the oven and let cool for a few minutes before serving.
Garnish with fresh parsley, if desired.
Serving Suggestions
Serve warm with ranch dressing, spicy aioli, honey mustard, or your favorite dipping sauce.
Tips
Be sure to drain the Rotel well to prevent the mixture from becoming too wet.
For extra heat, use hot breakfast sausage or spicy Rotel.
These sausage balls can be made ahead and refrigerated before baking.
Perfect for holiday gatherings, potlucks, brunch spreads, or anytime you need a delicious, crowd-pleasing appetizer!
