Ingredients
4 cups potatoes, peeled and thinly sliced or diced
2 cups smoked sausage, sliced into rounds
1 ½ cups shredded cheddar cheese
1 cup shredded mozzarella cheese (optional, for extra cheesiness)
1 small onion, finely chopped
2 cloves garlic, minced
1 cup heavy cream (or whole milk)
2 tablespoons butter, melted
1 teaspoon paprika
½ teaspoon dried thyme
½ teaspoon black pepper
1 teaspoon salt, or to taste
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick cooking spray.
In a large skillet over medium heat, melt the butter. Add the chopped onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the sliced smoked sausage to the skillet and cook for 3–4 minutes, allowing it to brown slightly and release its smoky flavor.
In a large mixing bowl, combine the potatoes, cooked sausage mixture, paprika, thyme, salt, and black pepper. Toss gently to coat.
Transfer the mixture to the prepared baking dish and spread it evenly.
Pour the heavy cream evenly over the top. Cover tightly with aluminum foil and bake for 40 minutes.
Remove the foil, sprinkle the cheddar and mozzarella cheeses evenly over the casserole, and return to the oven uncovered.
