Aunt Kathy’s Strawberry Icebox Cake
Ingredients (Serves 12)
2 cups cold whole milk (or 2%)
1 (3 oz) box strawberry gelatin mix
1 (3.4 oz) box instant vanilla pudding mix
1 (8 oz) package cream cheese, softened
1/4 cup powdered sugar
1 (16 oz) tub frozen whipped topping, thawed and divided
1 1/2 sleeves graham crackers (about 18–20 whole crackers)
1 cup sliced fresh strawberries (optional, for garnish)
Directions
1. Prep the dish
Lightly grease a 9×13-inch baking dish with cooking spray or a little butter.
Wipe out excess—just a thin coating helps with serving later.
2. Make the strawberry base
In a medium bowl, whisk together:
Cold milk
Strawberry gelatin mix
Whisk until fully dissolved and smooth (bright pink color).
Set aside.
3. Prepare the creamy filling
In a large bowl, beat softened cream cheese until smooth and fluffy.
Add powdered sugar and mix well.
Add the instant vanilla pudding mix (dry) and blend.
Slowly pour in the strawberry milk mixture while mixing.
Beat until thickened and creamy (about 2–3 minutes).
4. Fold in whipped topping
Gently fold in half of the whipped topping (about 8 oz).
Mix until light, fluffy, and evenly pink.
5. Layer the cake
Place a single layer of graham crackers on the bottom of the dish (break as needed to fit).
Spread a layer of the strawberry cream mixture over the crackers.
Repeat layers:
Graham crackers
Cream mixture
Finish with a final layer of cream on top.
6. Add the topping
Spread the remaining whipped topping evenly over the top.
Smooth it out nicely.
7. Chill (important!)
Cover and refrigerate for at least 4–6 hours, preferably overnight.
This softens the graham crackers into a cake-like texture.
8. Garnish & serve
Top with sliced fresh strawberries before serving (optional but pretty ).
Slice into squares and serve chilled.
Tips for Best Results
Overnight chilling = perfect soft layers.
Use full-fat cream cheese for richer flavor.
Want more strawberry flavor? Add thin strawberry slices between layers.
Keep refrigerated until serving—it softens quickly at room temp.
