Oven-Baked 4-Ingredient Beef Enchilada Casserole

Ingredients
1½ pounds ground beef
1 teaspoon salt (optional)
1 can (10 oz) red enchilada sauce (mild or medium)
10–12 small corn tortillas (about 6-inch)
3 cups shredded cheddar cheese
Directions
Preheat the oven
Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the beef
In a large skillet over medium-high heat, cook the ground beef, breaking it up as it browns.
Cook for about 7–10 minutes, until no longer pink and most liquid is gone.
Add sauce
Season with salt (if using), then pour in the enchilada sauce.
Stir until the beef is fully coated and saucy. Remove from heat.
Layer the casserole
Place 5–6 tortillas in the bottom of the dish (tear if needed).
Add half of the beef mixture.
Sprinkle half of the cheese on top.
Repeat layers
Add another layer of tortillas
Spread remaining beef mixture
Top with the rest of the cheese
Bake
Cover loosely with foil (tent it so it doesn’t stick)
Bake for 15 minutes
Remove foil and bake another 10–15 minutes, until hot and bubbly and the cheese is fully melted and lightly golden
Rest and serve
Let it sit for 5–10 minutes before cutting. This helps it hold together better when serving.
